ingredients: 1 cup adzuki or small red beans 1/2 cup sugar -------------------------- equipment: colander food processor/fork bowl pot -------------------------- 1. rinse beans in cold water 2. cover beans with water and soak overnight 3. strain out water 4. pour beans into pot and cover with 1 inch water 5. boil for 5 minutes 6. strain out water 7. put beans back into pot and cover with 1 inch of water 8. bring to boil, once it has boiled, reduce heat to simmer for 2 hours 8.5. beans are done when you can smoosh them between fingers 9. strain out beans, keep some of the water if you want your paste to be runnier 10. add beans to food processor to smash em up. if you don't have a food processor, you can just mash the beans with a fork 11. return paste to the pot at medium heat, add sugar, stir 11.25. add more sugar if you want a sweeter paste 11.5. paste will be more runny when sugar melts, but will solidify when cooled 11.75. cook down while stirring for a thicker paste. the longer you cook, the thicker the paste will be great filling for desserts!
