ingredients: 3 cups flour 2 teaspoons baking powder 1 teaspoon salt 1/3 cups vegetable oil 1 cup WARM water -------------------------- equipment: cast iron skillet rolling pin large bowl surface you don't mind covering with flour whisk/fork/your fuckin fingies -------------------------- 1. whisk flour, baking powder, and salt in a large bowl. leave a hole in the middle where liquid can pool 2. add vegetable oil and 3/4 cups of water to the bowl 3. spin in the flour mixture like a whirlpool with your hand until all combined. if the mixture is on the dry side, add the remaining water 4. knead dough on floured surface, about 2 minutes 4.5. roll dough up and in, press down 5. massage dough, then beat the absolute shit out of it (literally, like alternate massaging dough out and then punching it) until smooth 6. massage once smooth, about 2 more minutes 7. make uniform size balls out of dough. cover between parchment paper or damp kitchen towel when finished 7.5. to make balls same size, grab a handful of dough and squeeze gently in your palm. remove any that squeezes out below finger tips, add back to dough pile 8. heat cast iron skillet to med-high. skillet is ready when a drop of water rolls across when dripped on 9. while skillet heats, roll out balls of dough on a floured surface, with a floured rolling pin. roll pin from the middle to the bottom then back to the top, turn 10-20 degrees, then repeat 9.5. tortillas are ready when you can see your hand through them 10. heat tortillas in skillet until bubbles start to form, then wait about 15 seconds, then flip 11. use a spatula to direct air around inside the tortilla to cook everywhere, flip again, and you're finished! 11.5. the timing is going to be a little bit different every time depending on how hot your skillet is. fortunately this recipe makes quite a few tortillas so you can have one or two to practice the timing on 12. give the skillet a minute or two to heat back up, then repeat steps 10-12 until your dough balls are all gone! enjoy the tortillas :)
